Aspartame Structure
Aspartame is the methylester of phenylalanine and aspartic acid, which are two amino acids. When these two amino acids combine to make aspartame (1-methyl N -L-a-aspartyl-L-phenylalanine), they produce a highly sweet compound that is roughly 180 times sweeter than sucrose. A 1:9 ratio of aspartame to granular or fused mannitol can offer an acceptable basis for chewable tablets in terms of sweetness, tongue feel, lack of disagreeable aftertaste, and low calorie content.
